An excellent idea, particularly given how sparse weapons can be. It may also be wise to include actual armor pieces, forged or found?
I can offer lessons in swordsmanship, with a particular focus on defense. I also have a nicely-balanced sword and a few bits of scavenged armor.

Armor and shields are a great idea. There must be a way to make some from the materials we have.
We've got plenty of leather in our closets, at least. There's got to be something we can do with that.

Some of the things we're gathering for the game could work! The thick leather for the catching gloves, for example? We won't want to use those, of course, but you're absolutely right about the leather.
If we can harden it, we can make armor. In particular, I'd like everyone to have some way of protecting their arms and vital organs.

Helmets, too. If we're using hardened leather, could we rip the brims off some hats and use the tops as a base?

I'm trained in Japanese-style long and short swords, spears, and naginata.
If you don't know, a naginata is like a spear with a sword on the end of it

Crude spears and clubs would be the quickest way to build a stockpile, if we have people who can train us with them.

Weapons: I have my sword (obtained when Well first started looking somewhat different), which is a longsword, not quite a two-hander but could certainly be used or taught that way.
Teaching: Yes, I could instruct in the above, rapier, and dagger, and also curved blade (forward or backward curve; single or double, but you'd start learning one anyway).
In reverse order of preference.
